Anthocyanins are a group of water-soluble pigments commonly extracted from the flowers, fruits, leaves and roots of red, purple and blue plants like red cabbage, grapes, black carrots and blackcurrants. Anthocyanins are notable for their ability to display a spectrum of colours ranging from red to purple to blue to green, depending on the acidity or alkalinity of the environment.

Anthocyanin Blue is a vibrant natural blue, liquid colourant. 

Anthocyanin Blue has great buffering capabilities and will impart a blue colour in applications with pH values from pH 4 to 10.

Anthocyanin Powder

This dark purple-red water-soluble pigment powder is extracted from the leaves of the red cabbage plant (Brassica oleracea var. capitata f. rubra) and spray dried onto maltodextrin. The final colour in application will depend on the product pH.
