Nitrates are added to cheese milk to effectively inhibit the gas-producing Clostridia and/or Coliform bacteria to reduce the formation of gas holes in cheese. Nitrates can inhibit growth of starter cultures and slow down the ripening process. In high dosages it can discolour the cheese and cause reddish streaks and an impure taste. 

Sodium nitrate can also be used in the curing process of meats to enhance flavour, colour, and preservation. It acts as a preservative by inhibiting microbial growth and preventing spoilage, while also contributing to the characteristic pink colour of cured products.
